About Soba Noodles: Soba has been cultivated as an agricultural product suitable for high-cold areas where rice and wheat are difficult to grow, such as in cool climates and small lands. Legend has it that the buckwheat fruit that En no Gyōja and other monks used to carry as a food was passed on to the villagers and spread along with the cultivation method.

Characteristics of "Shinshu" Soba: In Nagano prefecture, where the temperature difference between day and night is large, you can grow delicious soba with aged starch. Furthermore, quality water is also critical. Soba is mainly made from buckwheat flour and water. And the boiled soba is tightened with plenty of cold water. Beautiful water is no longer everywhere. Shinshu soba is a traditional food only because of the beautiful climate and traditional techniques of Nagano prefecture.

About the Manufacturer: Soba-dokoro Yabu is a long-established brand founded in 1879 in Nagano prefecture. The additive-free soba noodles that have been protected since the establishment have smooth texture and authentic flavor of Soba. Comes with soup broth and "Shichimi" spice from Yawataya Isogoro, also the most known manufacturer of spice in Nagano.
